  • 8 cups Vegetable broth
  • 4 tablespoons Vegan butter
  • 0.5 cup Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Start by prepping your ingredients: Wash the red potatoes and cut them into quarters. Peel and roughly chop the yellow onion. Peel the garlic cloves. Cut the corn cobs into thirds.

In a large pot, combine the vegetable broth, Old Bay seasoning, smoked paprika, salt, and black pepper. Squeeze the juice of the lemon into the pot, then add the squeezed lemon halves as well.
