Ingredients

  • 400 g extra-firm tofu
  • 2 large bell peppers
  • 1 large red onion
  • 1 large zucchini
  • 250 g cherry tomatoes
  • 200 g mushrooms
  • 60 ml olive oil
  • 60 ml soy sauce
  • 30 ml lemon juice
  • 3 large garlic cloves
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • 8 None bamboo skewers

Directions

Step 1

Drain and press the tofu to remove excess moisture. Cut the tofu into 1-inch cubes.

Step 2

Cut the bell peppers, red onion, and zucchini into similarly-sized pieces as the tofu cubes.

Step 3

In a large mixing bowl, combine olive oil, soy sauce, lemon juice, minced garlic cloves, ground cumin, smoked paprika, dried oregano, black pepper, and salt. Mix well to form the marinade.

Step 4

Add the tofu cubes, bell peppers, red onion, zucchini, cherry tomatoes, and mushrooms to the marinade. Toss to coat well. Let sit for at least 15 minutes to absorb flavors, or refrigerate for up to 2 hours for deeper flavor penetration.

Preheat a grill or grill pan over medium-high heat. If using bamboo skewers, soak them in water for at least 15 minutes to prevent burning.
