  • 4 tablespoons vegan mayo
  • 2 tablespoons dijon mustard
  • 4 lettuce leaves
  • 1 large tomato
  • 2 tablespoons pickled jalapeños

Directions

Step 1

Begin by preparing the ingredients. Thinly slice the red onion and bell pepper. Slice the tomato into thin rounds.

Step 2

Heat a skillet over medium heat and add the olive oil. Add the sliced onion and bell pepper, cooking for about 5 minutes until they start to soften.

Step 3

Add the balsamic vinegar, salt, and black pepper to the skillet. Cook for an additional 3 minutes, stirring occasionally until the vegetables are caramelized. Remove from heat and set aside.
