Ingredients

  • 300 grams vegan marshmallows
  • 3 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 6 cups crispy rice cereal
  • 0.25 teaspoon salt

Directions

Step 1

Line a 9x13 inch baking dish with parchment paper and lightly grease it with a bit of coconut oil. This will make it easy to remove the treats later.

Step 2

In a large saucepan over medium heat, add the coconut oil and allow it to melt completely.

Step 3

Add the vegan marshmallows to the saucepan and stir continuously until they are completely melted and smooth. This should take about 5-7 minutes.

Step 4

Once melted, remove the saucepan from the heat. Add the vanilla extract and salt to the melted marshmallows and stir well to combine.

Working quickly, pour the crispy rice cereal into the melted marshmallow mixture. Stir until the cereal is completely coated in the marshmallow mixture.

Transfer the mixture to the prepared baking dish. Use a spatula coated in a little oil to evenly spread and press down the mixture into the pan. Be sure to press firmly so the treats hold together well.

Allow the treats to cool at room temperature for at least 30 minutes before cutting.

Once the treats have set, lift them out of the pan using the parchment paper and place on a cutting board. Cut into 16 squares.
