  • 6 medium potatoes
  • 2 cups unsweetened almond milk
  • 0.5 cup nutritional yeast
  • 2 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley
  • 0.5 cup whole grain breadcrumbs

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and peel the potatoes. Slice them into thin, even rounds, about 1/8 inch thick.

Step 3

In a medium saucepan over low heat, combine the almond milk, nutritional yeast, cornstarch, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir continuously until the sauce thickens slightly, about 5-7 minutes, then remove from heat.

Lightly grease a 9x13 inch baking dish with the olive oil.
