  • 2 tablespoons coconut oil
  • 1 cup granulated sugar
  • 0.5 cup light corn syrup
  • 0.25 cup water
  • 2 tablespoons vegan butter
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt

Directions

Step 1

Start by preparing the popcorn. In a large pot, heat the coconut oil over medium-high heat. Add the popcorn kernels and cover the pot with a lid.

Once you hear the first kernels popping, shake the pot occasionally to ensure even popping and prevent burning. Continue until the popping slows to about 2 seconds between pops.

Remove the pot from heat and transfer the popcorn to a large mixing bowl. Set aside.

In a medium saucepan, combine granulated sugar, light corn syrup, and water. Stir over medium heat until the sugar is completely dissolved.
