  • 4 whole ripe but firm pears (such as Bosc or Anjou)
  • 750 ml red wine
  • 250 ml water
  • 150 g granulated sugar
  • 1 whole cinnamon stick
  • 2 whole star anise
  • 1 whole vanilla bean, split and seeds scraped
  • 1 from one orange orange zest

Directions

Step 1

Begin by peeling the pears, leaving the stems intact. Use a melon baller or small spoon to core the pears from the bottom to remove the seeds.

Step 2

In a large saucepan, combine the red wine, water, granulated sugar, cinnamon stick, star anise, vanilla bean and seeds, and orange zest. Stir the mixture over medium heat until the sugar dissolves completely.

Step 3

Place the peeled pears into the saucepan. Ensure they are mostly submerged in the wine mixture. If needed, add a little more water or wine just to cover the pears.

Step 4

Bring the mixture to a gentle simmer. Cover the saucepan with a lid, leaving a small gap for steam to escape, and let the pears poach for about 20-25 minutes. Turn them occasionally to ensure even cooking.

Check the pears by piercing them gently with a knife; they should feel tender but not mushy.

Once cooked, carefully remove the pears from the saucepan and set them aside to cool.
