Ingredients

  • 1.5 cups All-purpose flour
  • 0.5 cup Coconut oil
  • 0.25 cup Maple syrup
  • 0.25 teaspoon Salt
  • 2 tablespoons Unsweetened almond milk
  • 2 cups Pecan halves
  • 0.75 cup Coconut cream
  • 0.5 cup Brown sugar
  • 2 tablespoons Cornstarch
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon

Directions

Step 1

Preheat the oven to 350°F (175°C). Grease a 9-inch tart pan with coconut oil.

Step 2

In a mixing bowl, combine the all-purpose flour and salt. Add the coconut oil, maple syrup, and almond milk. Mix until the dough comes together.

Step 3

Press the dough evenly into the bottom and up the sides of the prepared tart pan. Prick the base with a fork and chill in the refrigerator while preparing the filling.

Step 4

In a medium saucepan over medium heat, combine the coconut cream, brown sugar, cornstarch, and vanilla extract. Whisk consistently until the mixture thickens and starts to bubble, about 5-7 minutes.

Step 5

Remove the pan from heat and stir in the ground cinnamon.

Step 6

Arrange the pecan halves in the chilled crust in an even layer.

Step 7

Pour the filling mixture over the pecans, spreading it evenly.

Step 8

Bake in the preheated oven for 40-45 minutes, or until the filling is set and the crust is golden.

Step 9

Let the tart cool completely in the pan on a wire rack before slicing and serving.

Step 10

Serve the tart as is, or with a scoop of vegan ice cream for a delightful dessert.
