  • 1 cup coconut cream
  • 1 cup cane sugar
  • 1 cup light brown sugar
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon sea salt
  • 2 cups pecan halves
  • 2 tablespoons maple syrup

Directions

Step 1

Line a baking sheet with parchment paper and set aside.

In a medium saucepan, combine coconut cream, cane sugar, light brown sugar, and coconut oil. Bring to a boil over medium heat, stirring occasionally to ensure the sugar dissolves.

Once the mixture reaches a boil, reduce the heat to medium-low and attach a candy thermometer to the side of the pan. Continue cooking, stirring frequently, until the mixture reaches 235°F (soft ball stage). This should take about 10-12 minutes.
