Ingredients

  • 1 cup All-purpose flour
  • 1 cup Almond milk (or any plant-based milk)
  • 0.5 cup Water
  • 2 tablespoons Chickpea flour (besan)
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0 Vegan butter or oil spray (for cooking)

Directions

Step 1

In a large mixing bowl, combine all-purpose flour, chickpea flour, baking powder, and salt. Mix well to ensure even distribution of ingredients.

Step 2

Gradually add almond milk and water to the dry ingredients, whisking continuously to create a smooth batter. Make sure there are no lumps.

Step 3

Stir in the olive oil into the batter and let it rest for about 5 minutes to allow the chickpea flour to absorb some liquid.

Step 4

Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with vegan butter or oil spray.

Step 5

Using a ladle, pour approximately 1/4 cup of batter onto the pan, swirling or tilting the pan immediately to spread the batter into a thin, even layer.

Step 6

Cook for about 2-3 minutes or until the edges start to lift away and the surface appears set. Carefully flip the crepe using a spatula and cook for an additional 1-2 minutes on the other side until lightly golden.

Step 7

Transfer the cooked crepe to a plate. Repeat the process with the remaining batter, greasing the pan slightly in between each crepe if needed.

Step 8

Serve the crepes warm with your choice of vegan fillings such as sautéed vegetables, vegan cheese, fruit preserves, or a sprinkle of cinnamon and sugar.
