  • 2 tea bags black tea bags
  • 500 ml hot water
  • 100 g tapioca pearls
  • 50 g brown sugar
  • 50 ml water
  • 250 ml unsweetened almond milk
  • 2 tablespoons maple syrup
  • 6 cubes ice cubes

Directions

Step 1

Start by brewing the tea: Boil 500 ml of hot water and steep the black tea bags in the water for about 5-7 minutes until strong. Remove tea bags and let the tea cool to room temperature.

Step 2

Cook the tapioca pearls: Boil a pot of water and add the tapioca pearls. Cook them for about 20-25 minutes or until they become soft and chewy. Stir occasionally to prevent sticking.

Step 3

While the tapioca pearls are cooking, prepare the brown sugar syrup: In a small saucepan, combine 50 g of brown sugar with 50 ml of water. Cook over low heat, stirring until the sugar is completely dissolved. Let it simmer gently for another 5 minutes until the mixture slightly thickens.

Step 4

Once the tapioca pearls are cooked, remove them from the boiling water and rinse under cold water. Place them in the saucepan with the brown sugar syrup and let them soak for about 10 minutes to absorb the flavor.

In a large pitcher, combine the cooled black tea, 250 ml of unsweetened almond milk, and 2 tablespoons of maple syrup. Stir well.

Assemble the bubble tea: In a large glass, add half of the tapioca pearls along with some brown sugar syrup. Add ice cubes, then pour the tea and almond milk mixture over the ice.
