Ingredients

  • 4 pieces Large baking potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Vegan sour cream
  • 2 tablespoons Chopped chives
  • 2 tablespoons Nutritional yeast
  • 2 tablespoons Vegan butter
  • 1 teaspoon Garlic powder

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Rinse and scrub the potatoes clean under cold water, then pat them dry with a kitchen towel.

Step 3

Pierce each potato with a fork a few times on all sides to allow steam to escape during cooking.

Step 4

Rub each potato with olive oil, then sprinkle evenly with salt and black pepper.

Place the potatoes on the prepared baking sheet and bake in the preheated oven for 60-75 minutes, or until the skins are crispy and the insides are tender when pierced with a fork.
