Boil the potatoes in a pot of water until fully cooked, about 10-15 minutes. Once done, drain and let them cool. Peel and dice them into small cubes.
Rinse and drain the canned chickpeas, if using, or if using dried chickpeas, soak them overnight and cook them until tender.
