  • 0.5 cup frozen corn, thawed
  • 4 flour tortillas (12-inch)
  • 1 cup vegan cheese shreds
  • 0.25 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat olive oil in a large skillet over medium heat.

Step 2

Add chopped onion and minced garlic to the skillet, cooking and stirring for about 5 minutes or until the onion is translucent.

Add the vegan ground beef to the onion and garlic mixture. Cook for 5-7 minutes or until browned, stirring occasionally.
