Ingredients

  • 14 oz Extra firm tofu
  • 1 medium Zucchini
  • 1 large Red bell pepper
  • 1 large Red onion
  • 8 oz Button mushrooms
  • 1 pint Cherry tomatoes
  • 3 tbsp Olive oil
  • 2 tbsp Soy sauce
  • 2 tbsp Lemon juice
  • 3 Garlic cloves
  • 1 tsp Smoked paprika
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 0.5 tsp Black pepper
  • 0.5 tsp Salt
  • 0.25 cup Fresh parsley
  • 12 Wooden skewers

Directions

Step 1

Press the tofu for approximately 15 minutes to remove excess moisture. Cut the tofu into 1-inch cubes.

Step 2

Cut the zucchini into thick half-moons, slice the red bell pepper into 1-inch pieces, and quarter the red onion.

Step 3

Clean the button mushrooms and leave them whole. Set all the vegetables aside.

In a bowl, whisk together olive oil, soy sauce, lemon juice, minced garlic cloves, smoked paprika, ground cumin, ground coriander, black pepper, and salt to make the marinade.
