Ingredients

  • 0.5 cup Extra-virgin olive oil
  • 3 tablespoons Red wine vinegar
  • 2 tablespoons Lemon juice, freshly squeezed
  • 1 teaspoon Dijon mustard
  • 2 cloves Garlic, minced
  • 2 teaspoons Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Dried thyme
  • 0.5 teaspoon Sea salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 1 teaspoon Maple syrup
  • 2 tablespoons Water

Directions

Step 1

In a medium-sized mixing bowl or a mason jar, combine the red wine vinegar, lemon juice, and Dijon mustard.

Step 2

Add the minced garlic to the bowl, ensuring it's finely minced to distribute evenly in the dressing.

Step 3

Stir in the dried oregano, dried basil, and dried thyme, followed by the sea salt and freshly ground black pepper.

Step 4

Pour the extra-virgin olive oil into the mixture, whisking constantly to help emulsify the oil with the other ingredients.

Step 5

Add the maple syrup to the mixture to balance the acidity of the vinegar and lemon juice.

Step 6

Gently stir in the water to thin the dressing to your preferred consistency.

Step 7

If using a mason jar, seal the lid tightly and shake vigorously for about 30 seconds. Alternatively, whisk in the bowl until all ingredients are well combined.

Step 8

Taste and adjust seasoning if necessary, adding a little more salt or lemon juice as needed.

Step 9

Store the dressing in an airtight container in the refrigerator for up to one week. Shake well before each use.
