Ingredients

  • 200 g All-purpose flour
  • 100 g Vegan butter
  • 50 g Sugar
  • 0.25 tsp Salt
  • 3 tbsp Cold water
  • 300 g Silken tofu
  • 3 tbsp Cornstarch
  • 1 tsp Vanilla extract
  • 1 tbsp Lemon juice
  • 2 tbsp Nutritional yeast
  • 300 g Fresh seasonal fruits (e.g., strawberries, blueberries, kiwis)
  • 3 tbsp Apricot jam
  • 1 tbsp Water (for glaze)

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

In a large bowl, combine the all-purpose flour, sugar, and salt for the crust. Add in the vegan butter and mix using your fingertips until it resembles breadcrumbs.

Step 3

Add the cold water, one tablespoon at a time, and mix until the dough starts to come together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 15 minutes.

Step 4

Roll out the chilled dough on a floured surface to fit in a 9-inch tart pan. Press the dough into the bottom and up the sides of the pan. Prick the base with a fork to prevent bubbling.

For the glaze, heat the apricot jam with the water in a small pan until liquefied. Strain if necessary.
