Ingredients

  • 2 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.75 cup Unsweetened almond milk
  • 2 tablespoons Coconut oil, melted
  • 2 cups Apples, peeled and diced
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 2 tablespoons Maple syrup
  • 1 teaspoon Lemon juice
  • 3 cups Vegetable oil, for frying
  • 2 tablespoons Powdered sugar, for dusting

Directions

Step 1

In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt.

Step 2

Add the almond milk and melted coconut oil to the dry ingredients and mix until a soft dough forms. Knead gently until smooth.

Step 3

Wrap the dough in plastic wrap and refrigerate for 20 minutes.

While the dough chills, prepare the filling: In a medium-sized pan, combine the diced apples, cinnamon, nutmeg, maple syrup, and lemon juice. Cook over medium heat until apples are soft and the mixture is thickened, about 10 minutes. Allow to cool.

Once the dough is chilled, roll it out on a lightly floured surface to about 1/8-inch thick. Cut the dough into 4-inch squares.
