Ingredients

  • 1 cup Vegan cream cheese
  • 2 tablespoons Fresh dill
  • 1 tablespoon Lemon juice
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Freshly ground black pepper
  • 1 English cucumber
  • 8 slices Soft vegan white bread
  • 2 tablespoons Vegan butter (optional)

Directions

Step 1

1. In a small bowl, combine the vegan cream cheese, chopped fresh dill, lemon juice, salt, and freshly ground black pepper. Mix until smooth and well combined.

Step 2

2. Wash the English cucumber and slice it thinly into rounds. Aim for uniform slices that are about 1/8 inch thick.

Step 3

3. Lay out the slices of vegan white bread and, if desired, lightly spread a thin layer of vegan butter on one side of each slice to add richness.

Step 4

4. Spread a generous layer of the cream cheese mixture over each slice of bread, covering the surface evenly.

Step 5

5. Arrange the cucumber slices in a single layer over the cream cheese mixture on half of the bread slices, overlapping slightly if needed to cover the bread completely.

Step 6

6. Top each cucumber-covered slice with a plain cream cheese slice, cream cheese side down, to make a sandwich.

Step 7

7. Trim the crusts off each sandwich using a sharp knife to create clean edges.

Step 8

8. Cut each sandwich into four equal triangles or rectangles, as preferred.

Step 9

9. Serve immediately or cover and refrigerate until ready to serve. These sandwiches are best enjoyed on the same day they are made.
