Ingredients

  • 14 oz extra-firm tofu
  • 1 cup unsweetened almond milk
  • 0.5 cup all-purpose flour
  • 0.25 cup nutritional yeast
  • 1 cup panko breadcrumbs
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp garlic powder
  • 2 tbsp olive oil
  • 1 cup vegan mozzarella cheese
  • 2 cups marinara sauce
  • 5 leaves fresh basil leaves (for garnish)
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Drain the tofu and press it to remove excess moisture. Cut the tofu into 4 even slices.

Step 2

In a small bowl, whisk together the almond milk and flour to create a batter. Season with salt and black pepper.

Step 3

In another bowl, mix the nutritional yeast, panko breadcrumbs, oregano, basil, and garlic powder.

Dip each tofu slice first in the almond milk mixture, allowing excess to drip off, then coat with the breadcrumb mixture.
