  • 240 grams All-purpose flour
  • 120 grams Coconut oil
  • 3 tablespoons Cold water
  • 0.5 teaspoon Salt
  • 600 grams Fresh cherries, pitted and halved
  • 100 grams Granulated sugar
  • 2 tablespoons Cornstarch
  • 2 tablespoons Lemon juice
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Almond milk

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large mixing bowl, combine the all-purpose flour and salt. Add the coconut oil and mix with a pastry cutter or fork until the mixture resembles coarse crumbs.

Step 3

Add the cold water, one tablespoon at a time, mixing lightly after each addition until the dough comes together and can be formed into a ball. Wrap the dough in plastic wrap and refrigerate for at least 15 minutes.

In another bowl, combine the pitted cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir gently to coat the cherries evenly.
