  • 4 large Russet potatoes
  • 1 cup Cashews
  • 1 cup Nutritional yeast
  • 1.5 cups Unsweetened almond milk

  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Vegan butter
  • 3 tablespoons Chopped chives

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Peel and slice the potatoes into uniform 1/4-inch thick rounds. Set aside.

Step 3

In a bowl, soak the cashews in hot water for at least 15 minutes, then drain.

Step 4

Combine soaked cashews, nutritional yeast, almond milk, lemon juice, garlic powder, onion powder, smoked paprika, salt, and black pepper in a blender. Blend until smooth and creamy. Taste and adjust seasoning if needed.
