Ingredients

  • 1 cup almonds
  • 1 cup desiccated coconut
  • 10 units pitted dates
  • 2 tablespoons coconut oil, melted
  • 0.25 teaspoons salt
  • 1 cup coconut cream
  • 0.5 cup maple syrup
  • 0.5 cup coconut sugar
  • 0.5 cup almond butter
  • 1 teaspoon vanilla extract
  • 200 grams dark chocolate, vegan
  • 2 teaspoons coconut oil (for chocolate topping)

Directions

Step 1

Preheat your oven to 180°C (356°F) and line an 8x8 inch square baking tin with parchment paper.

Step 2

For the base, in a food processor, combine almonds, desiccated coconut, pitted dates, melted coconut oil, and salt. Process until the mixture resembles wet sand and holds together when pressed.

Step 3

Press the mixture evenly into the prepared baking tin to form a firm base. Bake in the preheated oven for 10-12 minutes until lightly golden. Allow to cool completely.

Step 4

To make the caramel layer, mix coconut cream, maple syrup, coconut sugar, almond butter, and vanilla extract in a saucepan over medium heat. Stir constantly until the mixture starts to thicken, about 15-20 minutes.

Once the caramel is thickened, pour it over the cooled base and spread evenly. Place in the fridge to set for at least an hour.

Step 6

For the chocolate topping, melt the dark chocolate and 2 teaspoons of coconut oil together in a heatproof bowl set over a pan of simmering water, ensuring the bowl doesn’t touch the water. Stir until smooth.

Pour the melted chocolate over the set caramel layer. Gently tilt the pan to evenly coat the caramel with chocolate. Place back in the fridge to set completely, approximately 1-2 hours.

Once fully set, use a sharp knife to cut the slice into 16 squares or your preferred serving size. Serve chilled and store in the refrigerator.
