Ingredients

  • 250 g vegan pasta (fettuccine or spaghetti)
  • 60 g vegan butter
  • 2 units garlic cloves, minced
  • 2 tbsp nutritional yeast
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, chopped
  • 0.5 tsp sea salt
  • 0.25 tsp ground black pepper
  • 1 tbsp olive oil
  • 2 liters water (for boiling)

Directions

Step 1

1. Fill a large pot with 2 liters of water and bring it to a boil over high heat. Add a pinch of salt to the boiling water.

2. Add the vegan pasta to the boiling water and cook according to the package instructions, usually around 8-10 minutes until al dente.

3. While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat.

4. Add the minced garlic to the skillet and sauté for about 1-2 minutes or until fragrant, being careful not to burn it.

5. Add the vegan butter to the skillet and let it melt, stirring occasionally to combine with the garlic.

6. Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water and then drain the pasta.
