In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Stir the ingredients together until well mixed.
In a small saucepan over medium-low heat, warm the almond milk and vegan butter until the butter is just melted. Do not allow the mixture to boil.
Remove the saucepan from heat and stir in the vanilla extract.
Pour the warm almond milk mixture into the dry ingredients. Stir until a dough begins to form.
Knead the dough on a lightly floured surface for about 10 minutes until it becomes smooth and elastic.
Place the dough back into the mixing bowl, cover it with a damp cloth, and let it rise in a warm place for about 1.5 to 2 hours, or until it has doubled in size.
Punch down the risen dough and roll it out on a floured surface to about 1/2 inch thickness.
Using a round cookie cutter or a glass, cut out dough circles and place them on a baking sheet lined with parchment paper.
Cover the dough circles with a cloth and let them rest for another 30 minutes to rise slightly.
In a heavy-duty pot, heat the vegetable oil to 180°C (350°F).
Carefully drop the risen dough circles into the hot oil, frying them in batches to avoid overcrowding. Fry each side for about 2-3 minutes until golden brown.
Remove the doughnuts from the oil and drain them on a paper towel-lined plate.
Once the doughnuts are cool enough to handle, use a pastry bag fitted with a narrow tip to fill each Berliner with the fruit jam.
Dust the filled Berliners with powdered sugar before serving.
