Ingredients

  • 400 grams Firm tofu
  • 200 ml Coconut milk
  • 100 grams Powdered sugar
  • 1 teaspoon Cardamom powder
  • 10 grams Pistachios
  • 10 strands Saffron strands
  • 1 teaspoon Rose water
  • 1 tablespoon Coconut oil

Directions

Step 1

Drain the tofu and pat dry with a paper towel to remove excess water.

Step 2

In a blender, add the tofu and coconut milk and blend until smooth and creamy.

Step 3

Transfer the tofu-coconut mixture into a non-stick pan over medium heat.

Step 4

Add the powdered sugar and cardamom powder to the pan, stirring continuously for about 10-12 minutes until the mixture thickens and leaves the sides of the pan.

Step 5

Stir in the coconut oil and cook for another couple of minutes until the mixture has a dough-like consistency.

Step 6

Remove from heat and add the rose water. Mix well and let the mixture cool slightly.

Step 7

Finely chop the pistachios and set aside. Soak saffron strands in a tablespoon of warm water to release their color and flavor.

Step 8

While the mixture is still warm, take small portions and shape them into round balls or flatten them slightly for a disc shape.

Step 9

Garnish each Sandesh with a pinch of chopped pistachios and a saffron strand.

Step 10

Let them cool completely at room temperature before serving or refrigerate for a firmer texture.
