Ingredients

  • 4 slices Vegan bacon
  • 2 pieces English muffins
  • 1 whole Avocado
  • 0.25 cup (sliced) Red onion
  • 1 whole Tomato
  • 1 cup Spinach leaves
  • 2 tablespoons Vegan sriracha mayo
  • 1 tablespoon Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat a non-stick skillet over medium heat and add olive oil.

Step 2

Add the slices of vegan bacon to the skillet. Cook for 3-4 minutes on each side, or until crispy and golden brown. Remove from skillet and set aside.

While the bacon is cooking, slice the English muffins in half and toast them until golden brown.
