Preheat a grill or skillet over medium-high heat.
Slice the tomato into thin rounds and set aside. Peel the red onion and slice it into thin rings.
Drizzle olive oil lightly over the grill or skillet. Once heated, place the Beyond Meat patties on the grill.
Cook the patties for about 3-4 minutes on each side, or until they have a nice brown crust.
During the last minute of cooking, place a slice of vegan cheddar cheese on top of each patty and cover the grill or pan to melt the cheese.
