Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 1 teaspoon Ground cinnamon
  • 1 cup Granulated sugar
  • 1 cup Unsweetened almond milk
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Vanilla extract
  • 0.25 cup Coconut oil, melted
  • 1 teaspoon Ground cinnamon (for topping)
  • 0.5 cup Granulated sugar (for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a donut pan with non-stick spray or a small amount of coconut oil.

Step 2

In a medium-sized mixing bowl, whisk together the flour, baking powder, baking soda, salt, ground cinnamon, and granulated sugar until well combined.

Step 3

In a small bowl, combine the almond milk and apple cider vinegar, stirring briefly. Let this mixture sit for about 5 minutes until it slightly curdles.

Step 4

Add the vanilla extract and melted coconut oil to the almond milk and vinegar mixture, then stir until the ingredients are thoroughly mixed.

Step 5

Pour the wet ingredients into the dry ingredients and gently fold the mixture with a spatula until just combined. Be careful not to over-mix.

Step 6

Transfer the batter into a piping bag or a large zip-lock bag with one corner snipped off, then pipe the batter evenly into the prepared donut pan, filling each cavity about 3/4 full.

Step 7

Bake the donuts in the preheated oven for 10-12 minutes, or until the donuts have risen and are lightly golden. A toothpick inserted into the center should come out clean.

Step 8

Remove the donuts from the oven and allow them to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Step 9

While the donuts are cooling, mix the extra ground cinnamon and granulated sugar together in a shallow bowl for the topping.

Step 10

Once the donuts are cool enough to handle, gently brush them with a bit of melted coconut oil (optional) before dipping each donut into the cinnamon sugar mixture, ensuring each donut is fully coated.

Step 11

Serve the donuts immediately for the best texture and flavor, or store them in an airtight container for up to 2 days.
