Warm the almond milk until lukewarm. Add the active dry yeast and 1 tablespoon of the granulated sugar. Stir and let it sit for about 5 minutes until frothy.
In a large mixing bowl, combine the flour, remaining granulated sugar, melted vegan butter, salt, and vanilla extract. Pour in the yeast mixture.
Mix the ingredients to form a dough, then knead it on a floured surface for about 10 minutes until the dough is smooth and elastic.
Place the dough in a greased bowl, cover it with a clean towel, and let it rise in a warm place for about 1 to 1.5 hours or until doubled in size.
Once the dough has risen, punch it down to release the air. Roll it out on a floured surface to form a rectangle approximately 40x30cm in size.
