Ingredients

  • 4 ripe pears (such as Bosc or Anjou)
  • 2 tablespoons coconut oil
  • 1 teaspoon cinnamon
  • 3 tablespoons vegan honey substitute (such as agave syrup or maple syrup)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup chopped nuts (such as walnuts or pecans)
  • 0.25 teaspoon sea salt

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Wash and halve the pears lengthwise. Use a spoon or melon baller to remove the core and seeds, creating a small well in each pear half.

Step 3

Lightly grease a baking dish with 1 tablespoon of coconut oil.

Step 4

Place the pear halves cut-side up in the greased baking dish.

Step 5

In a small bowl, mix the remaining 1 tablespoon of coconut oil with the cinnamon, vegan honey substitute, lemon juice, and vanilla extract until well combined.

Step 6

Spoon the mixture over the pear halves, making sure each half is coated evenly.

Step 7

Sprinkle the chopped nuts over the pears, pressing them gently into the honey-mix to ensure they stick.

Step 8

Lightly sprinkle a pinch of sea salt over the pears.

Step 9

Cover the baking dish with aluminum foil to prevent the nuts from burning.

Step 10

Bake in the preheated oven for 20 minutes.

Step 11

Remove the foil, then continue to bake for an additional 10 minutes, or until the pears are tender and the tops are golden.

Step 12

Remove from the oven and let cool slightly before serving. Enjoy warm.
