Ingredients

  • 4 ears Fresh corn on the cob
  • 2 tablespoons Olive oil
  • 1 cup Fresh cilantro leaves
  • 1 large Lime
  • 2 large Garlic clove
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Cumin
  • 1 medium Avocado

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Remove the husks and silk from the corn and rinse under running water. Pat dry with paper towels.

Step 3

Brush each ear of corn with 1 tablespoon of olive oil and place them on a baking sheet.

Step 4

Roast the corn in the preheated oven for 20 minutes, turning halfway through, until the corn is tender and has a slight char.

While the corn is roasting, finely chop the cilantro leaves and set aside.
