Ingredients

  • 200 grams Dark chocolate (dairy-free, 70% cocoa or higher)
  • 120 ml Aquafaba (liquid from a can of chickpeas)
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 pinch Pinch of salt

Directions

Step 1

Break the dark chocolate into small pieces and place them in a heatproof bowl.

Step 2

Melt the chocolate gently over a double boiler or in the microwave in 20-second intervals, stirring frequently to avoid burning. Set aside to cool slightly.

Step 3

Pour the aquafaba into a large mixing bowl and use an electric hand mixer or stand mixer fitted with the whisk attachment to whip it until stiff peaks form. This can take 5-8 minutes.

Step 4

Once the aquafaba is whipped, sift in the powdered sugar and add the vanilla extract and a pinch of salt. Continue whipping for another minute to combine.

Step 5

Check that the melted chocolate has cooled enough to be warm but not hot. Gently fold the melted chocolate into the whipped aquafaba using a silicone spatula, being careful not to deflate the mixture. Fold until the chocolate is fully incorporated and the mousse is smooth.

Step 6

Divide the mousse into serving glasses or bowls, smoothing the tops as needed.

Step 7

Chill in the refrigerator for at least 2 hours to set properly.
