Ingredients

  • 2 cups full-fat coconut milk

  • 0.75 cup dark chocolate chips (vegan)
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 1 cup mixed nuts (such as almonds, hazelnuts, and cashews), chopped
  • 2 tablespoons coconut oil

Directions

Step 1

In a medium saucepan, combine the coconut milk, cocoa powder, and maple syrup. Place over medium heat, stirring frequently, until the mixture is smooth and begins to simmer. Remove from heat.

Stir in the vegan dark chocolate chips, vanilla extract, and salt into the warm coconut milk mixture. Continue stirring until the chocolate chips have completely melted and the mixture is smooth.

Allow the mixture to cool slightly, then pour it evenly into ice cream bar molds.
