Ingredients

  • 12 pieces Medjool dates
  • 1 cup Raw almonds
  • 1 tablespoon Unsweetened cocoa powder
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Sea salt
  • 0.75 cup Shredded unsweetened coconut
  • 2 tablespoons Coconut oil

Directions

Step 1

Pit the Medjool dates and soak them in warm water for about 10 minutes to soften.

Step 2

In a food processor, combine the raw almonds and process until they are finely ground.

Step 3

Add the softened dates, cocoa powder, vanilla extract, sea salt, and coconut oil to the ground almonds in the food processor.

Step 4

Process the mixture until it forms a sticky dough. It should hold together well when pinched between your fingers. If too dry, add 1 teaspoon of water and process again.

Step 5

Transfer the dough into a bowl and add 0.5 cup of the shredded coconut. Mix until well combined.

Step 6

Using a tablespoon measure, scoop out the mixture and roll it between your palms to form balls.

Spread the remaining 0.25 cup of shredded coconut onto a plate. Roll each ball in the coconut to coat.

Step 8

Place the chocolate coconut balls onto a tray lined with parchment paper.
