Ingredients

  • 2 cups Cooked short-grain brown rice
  • 0.5 cup Chopped fresh chives
  • 0.5 cup Finely chopped onion
  • 2 tablespoons Ground flaxseeds
  • 5 tablespoons Water
  • 2 tablespoons Nutritional yeast
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil

Directions

Step 1

In a small bowl, mix the ground flaxseeds with 5 tablespoons of water to create a flax egg. Stir well and let it sit for about 5 minutes until it becomes gelatinous.

Step 2

In a large mixing bowl, combine the cooked short-grain brown rice, chopped fresh chives, finely chopped onion, nutritional yeast, garlic powder, onion powder, salt, and black pepper.

Step 3

Add the prepared flax egg to the rice mixture and mix thoroughly until all ingredients are evenly incorporated.

Step 4

Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.

Step 5

Form the rice mixture into small patties, about 2-3 inches in diameter and about 1/2 inch thick.

Step 6

Once the oil is hot, carefully place the patties on the skillet. Cook them for about 3-4 minutes on each side, or until they are crispy and golden brown.

Step 7

Transfer the cooked rice cakes to a plate lined with paper towels to drain any excess oil.

Step 8

Repeat the frying process with the remaining olive oil and rice mixture, adding oil as needed.

Step 9

Serve the Vegan Chive and Onion Rice Cakes warm as a snack or side dish. Enjoy!
