  • 4 Large flour tortillas
  • 2 tablespoons Olive oil
  • 1 Red onion, sliced
  • 1 Red bell pepper, sliced
  • 1 Zucchini, chopped
  • 2 Garlic cloves, minced
  • 1 can Canned black beans, rinsed and drained
  • 2 tablespoons Canned chipotle peppers in adobo sauce, chopped
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 cup Fresh cilantro, chopped
  • 1 Avocado, sliced
  • 2 tablespoons Fresh lime juice
  • 2 cups Fresh spinach leaves
  • 1 cup Salsa of choice

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the red onion and sauté for 3-4 minutes until softened.

Step 3

Stir in the red bell pepper, zucchini, and minced garlic. Cook for an additional 5-7 minutes until the vegetables are tender.

Step 4

Add the black beans, chopped chipotle peppers, ground cumin, paprika, and salt to the skillet. Stir well to combine and cook for another 2-3 minutes until heated through.

Stir in the fresh cilantro and remove the skillet from the heat.
