Ingredients

  • 2 cans (each 20 oz) Canned young green jackfruit
  • 2 tablespoons Soy sauce
  • 2 tablespoons Chipotle peppers in adobo sauce
  • 1 tablespoon Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Ground black pepper
  • 4 large Tortilla wraps
  • 2 cups Cooked white rice
  • 1 cup, cooked Black beans
  • 1 large, sliced Avocado
  • 1 large, diced Tomato
  • 0.5 cup, chopped Cilantro
  • 1 large, cut into wedges Lime
  • 0.5 teaspoon Salt

Directions

Step 1

Drain and rinse the jackfruit thoroughly. Pat dry with a paper towel to remove excess moisture.

Step 2

In a bowl, combine soy sauce, chipotle peppers in adobo sauce, olive oil, garlic powder, onion powder, cumin, smoked paprika, ground black pepper, and salt. Mix well to form the marinade.

Step 3

Add the jackfruit to the marinade, ensuring all pieces are well coated. Let it sit for at least 10 minutes to absorb the flavors.

Step 4

Heat a skillet over medium heat. Add the marinated jackfruit and cook for 10-15 minutes, occasionally stirring and using a fork to shred the jackfruit further.

Step 5

Warm the tortilla wraps in a microwave or on a skillet for a few seconds until pliable.

Step 6

To assemble the burritos, place an even amount of cooked white rice, black beans, jackfruit filling, avocado slices, diced tomato, and chopped cilantro in the center of each tortilla.

Step 7

Fold in the sides of the tortilla and roll it up tightly from the bottom to form a burrito.

Step 8

Serve each burrito with a wedge of lime on the side for squeezing on top before eating.
