Ingredients

  • 2 cups all-purpose flour
  • 0.75 cup warm water
  • 0.5 teaspoon salt
  • 7 ounces firm tofu
  • 1 cup napa cabbage
  • 1 medium carrot
  • 2 stalks green onions
  • 2 cloves garlic
  • 1 inch piece ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 0.25 teaspoon white pepper

Directions

Step 1

In a large mixing bowl, mix all-purpose flour and salt. Gradually add warm water while stirring with a fork or chopsticks until a dough begins to form.

Step 2

Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

Step 3

For the filling, crumble the tofu into small pieces using your hands or a fork. Finely shred the napa cabbage, grate the carrot, and chop the green onions, garlic, and ginger.

Step 4

In a large pan, heat vegetable oil over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.

Step 5

Add grated carrot and napa cabbage, cook for 3-4 minutes until softened. Stir in the crumbled tofu, soy sauce, sesame oil, and white pepper. Cook for another 2-3 minutes. Mix in the chopped green onions.

Step 6

Transfer the filling to a bowl and let cool completely.

Step 7

Divide the rested dough into four pieces. Roll each piece into a small log and cut into 12 equal pieces for a total of 48 pieces.

Step 8

Roll each piece into a thin circle about 3 inches in diameter on a floured surface.

Step 9

Place about 1 tablespoon of filling in the center of each dough circle. Fold the dough over the filling to create a half-moon shape and pinch the edges to seal tightly.

Step 10

In a large skillet, heat a tablespoon of oil over medium-high heat. Arrange the dumplings in the skillet, pleated side up, and cook for about 2 minutes until the bottoms are golden brown.

Step 11

Carefully add about 1/4 cup of water to the skillet and cover with a lid. Steam the dumplings for another 4-5 minutes until the water has evaporated and the dumplings are cooked through.

Step 12

Serve the dumplings hot with soy sauce or your favorite dipping sauce.
