  • 200 grams Somen noodles
  • 60 ml Soy sauce
  • 50 ml Mirin
  • 20 ml Rice vinegar
  • 1 tablespoon Maple syrup
  • 1 tablespoon Sesame oil
  • 1 teaspoon Fresh ginger
  • 1 Garlic clove
  • 2 Green onions
  • 1 tablespoon Toasted sesame seeds
  • 0.5 Nori seaweed sheet
  • 1 cup Ice cubes

Directions

Step 1

Start by boiling a large pot of water. Once boiling, add the somen noodles and cook according to package instructions, typically around 2-3 minutes, until they are just tender.

While the noodles are cooking, prepare the dipping sauce. In a small bowl, combine soy sauce, mirin, rice vinegar, maple syrup, and sesame oil.

Grate the fresh ginger and finely mince the garlic clove, then add them both to the sauce.
