  • 400 g Vegan chicken pieces (store-bought or homemade)
  • 2 tablespoons Olive oil

  • 150 g Button mushrooms, sliced
  • 2 tablespoons All-purpose flour
  • 500 ml Vegetable broth
  • 150 ml Cashew cream
  • 2 tablespoons Nutritional yeast
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Add the vegan chicken pieces and sauté for about 5-7 minutes until they are slightly browned. Remove from the skillet and set aside.

Step 3

In the same skillet, add the remaining tablespoon of olive oil.

Step 4

Add the chopped onion and cook until translucent, about 3-4 minutes.

Stir in the minced garlic and cook for another minute until fragrant.

Add the sliced mushrooms and cook for 5 minutes, until they start to soften.
