  • 0.5 tsp salt
  • 2 tbsp olive oil
  • 8 slices whole grain or sourdough bread slices
  • 1 unit cucumber, thinly sliced
  • 1 unit tomato, sliced
  • 4 leaves lettuce leaves
  • 0.5 cup vegan mayonnaise
  • 0.25 cup fresh cilantro, chopped

Directions

Step 1

Drain and press the tofu to remove excess moisture. Cut the tofu into 1/2-inch thick slices.
