  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried thyme
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 8 pieces wooden or metal skewers

Directions

Step 1

Start by pressing the tofu to remove excess moisture. Wrap it in a clean kitchen towel and place a heavy object on top. Leave for about 15 minutes.

While the tofu is draining, prepare the marinade. In a medium bowl, combine the coconut yogurt, olive oil, lemon juice, minced garlic, smoked paprika, ground cumin, ground coriander, dried thyme, cayenne pepper, salt, and black pepper. Mix until well combined.

Cut the pressed tofu into bite-sized cubes, approximately 1-inch each.
