  • 3 cups vegetable broth
  • 1 15-oz can canned chickpeas, drained and rinsed
  • 1 14.5-oz can diced tomatoes
  • 0.5 cup dried apricots, chopped
  • 0.5 cup kalamata olives, pitted and sliced
  • 2 medium carrots, peeled and sliced
  • 1 pound Vegan chicken (store-bought or homemade)
  • 1 teaspoon salt
  • 0.25 cup fresh cilantro, chopped
  • 0.25 cup fresh parsley, chopped
  • 2 tablespoons lemon juice

Directions

Step 1

Heat the olive oil in a large pot or a tagine over medium heat.

Add the chopped onion and sauté until it's soft and translucent, about 5 minutes.
