  • 0.5 teaspoon Ground coriander
  • 1 tablespoon Olive oil
  • 8 pieces Corn tortillas
  • 0.5 cup Red onion, diced
  • 0.25 cup Fresh cilantro, chopped
  • 0.5 cup Cherry tomatoes, quartered
  • 1 whole Avocado, sliced
  • 1 whole Lime, cut into wedges
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a medium mixing bowl, combine the chili powder, paprika, garlic powder, onion powder, cumin, ground coriander, salt, and black pepper.

Cut the seitan into thin strips if using whole seitan. Add the seitan into the bowl with the spice mixture and toss until the seitan is evenly coated.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once hot, add the seasoned seitan strips.
