  • 12 sheets rice paper wrappers
  • 200 grams vegan chicken strips
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon sesame oil
  • 2 cloves garlic
  • 1 large carrot
  • 1 medium cucumber
  • 1 medium red bell pepper
  • 1 large avocado
  • 24 leaves fresh mint leaves
  • 12 sprigs fresh cilantro
  • 6 large lettuce leaves
  • 1 medium lime
  • 4 tablespoons peanut butter
  • 2 tablespoons soy sauce for dipping
  • 1 teaspoon sriracha
  • 2 tablespoons water

Directions

Step 1

1. Begin by marinating the vegan chicken strips. In a bowl, mix 2 tablespoons of soy sauce, 1 tablespoon of maple syrup, and 1 teaspoon of sesame oil. Mince 2 cloves of garlic and add to the mixture. Toss in the vegan chicken strips and let them marinate for at least 15 minutes.

2. While the vegan chicken is marinating, prepare the vegetables. Julienne the carrot, cucumber, and red bell pepper into thin strips. Slice the avocado into thin wedges and prepare the mint leaves and cilantro sprigs.
