  • 250 grams Vegan chicken strips
  • 1 tablespoon Olive oil
  • 1 medium, sliced Red bell pepper
  • 0.5 medium, sliced Red onion
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Chili powder
  • 200 grams, shredded Vegan cheddar cheese
  • 4 large Flour tortillas
  • 2 tablespoons, chopped Fresh cilantro
  • 1 medium, cut into wedges Lime
  • 1 medium, sliced Avocado

Directions

Step 1

Heat olive oil in a large skillet over medium heat. Add the sliced red bell pepper and red onion. Cook for about 5 minutes, stirring occasionally, until they are softened.

Step 2

Add the vegan chicken strips to the skillet with the bell pepper and onion. Season with salt, ground black pepper, ground cumin, and chili powder. Stir well and cook for an additional 5 minutes or until the vegan chicken is heated through.

Step 3

Remove the skillet from heat and set the cooked mixture aside.

Place a large skillet or griddle over medium heat. Once hot, place one tortilla in the skillet.
