Ingredients

  • 2 sheets Vegan puff pastry sheets
  • 200 grams Plant-based chicken pieces
  • 2 tablespoons Olive oil
  • 1 medium, finely chopped Onion
  • 3 minced Garlic cloves
  • 1 small, finely chopped Green bell pepper
  • 1 teaspoon Curry powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 50 grams, shredded Vegan cheese
  • 2 tablespoons Soy milk
  • 1 tablespoon, for dusting Flour

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 2

Heat olive oil in a pan over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

Step 3

Add the minced garlic and cook for another minute until fragrant.

Step 4

Add the chopped green bell pepper and cook for about 2-3 minutes until softened.

Stir in the plant-based chicken pieces, curry powder, salt, and black pepper. Cook for about 4-5 minutes until the mixture is well combined and heated through.

Remove from heat and let the mixture cool slightly. Stir in the vegan cheese until evenly distributed.

Lightly dust a clean surface with flour and roll out the puff pastry sheets.

Cut each sheet into four equal squares.
