  • 2 tablespoons fresh parsley

Directions

Step 1

Begin by preparing the vegetables. Slice the cucumber and cherry tomatoes into thin rounds. Thinly slice the red onion and roughly chop the lettuce leaves into bite-sized pieces. Chop the fresh parsley and set it aside.

In a small bowl, mix the lemon juice, salt, and black pepper. Add in the sliced cucumber, cherry tomatoes, and red onion. Toss to coat and let it marinate while you prepare the rest of the ingredients.
