Ingredients

  • 200 grams Vegan chicken strips
  • 4 slices Vegan bacon slices
  • 4 pieces Large whole wheat tortillas
  • 1 medium Ripe avocado
  • 100 grams Cherry tomatoes
  • 100 grams Mixed salad greens
  • 4 tablespoons Vegan mayonnaise
  • 1 tablespoon Lemon juice
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat olive oil in a non-stick frying pan over medium heat.

Step 2

Add the vegan chicken strips to the pan and cook for about 5 minutes, turning occasionally until golden brown and crispy.

Step 3

Remove the vegan chicken from the pan and set aside. In the same pan, lay the vegan bacon slices and cook for 2-3 minutes on each side until crispy.

Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado using a fork and mix in lemon juice, salt, and pepper to taste.
